Grilled Lobster Tail

This was my first attempt at grilling lobster. The final product was as good as anything I've been served in a restaraunt so I'll add this to my regular cooking arsenal. The best part is, it was simple and easy. The inspiration for this cook came from watching Mike Davis from Lotta Bull win a lobster grilling category on one of the TV shows

Ingredients
  • Lobster Tail (I used an 8oz. Costco Wild Honduran Lobster for this cook...$12.50 but worth every penny)
  • 1 stick butter
  • 1 tablespoon chopped garlic
  • Rub or seasoning of choice (I used Lotta Bull's UnBULLeivable! for this cook)
Directions

Pre-heat grill to HIGH. Clean grate by spritzing water ahead of the grill brush. Reduce heat to MEDIUM.

Remove the lobster tail from the shell and rinse under cold water. Pat dry with paper towel. Sprinkle seasoning as you would a steak.

Prepare garlic butter baste by melting 1 stick of butter in a cup (microwave works great). Once melted, add the chopped garlic to the butter.

Spray Pam on grill grate to prevent sticking. Place lobster on grill and immediately begin to baste with garlic butter. Your grill will flare quite a bit with the melted butter dripping but that is okay. Don't be afraid to let the flames caress (and occasionally surround) the lobster...it won't complain. Flip lobster every couple of minutes and keep basting throughout the cook. Make sure and grill all 4 sides of the tail for consistency.
Remove the lobster from the grill when the meat in the thickest part of the tail turns opaque (mine temped out at 140F-145F). It took about 7 minutes for mine to finish. Let it rest for 5 minutes before serving.

This dish is best served with a grilled steak.
