    Smile Hello and "Thank You" already

    Years ago I spent some time in East Texas. Folks that their smokers out by the road and sold sandwiches and such. I was hooked. Then I went to work as a metal fabricator in a new plywood mill that some of these ol'boys from East Texas bought. One of the very first things I did was to build some "pits" as they called um'. I had access to used air receivers (tanks) so we built them some, one was on a trailer and the other three they loaded with the forktruck. I always wanted to build a side fire box smoker style BBQ. Also when I was a kid my Dad bought a komada, it is a knock off but is still in perfect condition.

    I have a Char-Griller w/side fire box. Nice looking, good price and one heck of a lot faster and easyer than me building one.

    So thanks for letting me tag along here folks and if any of you see one of my posts and I am way out of joint and going the wrong direction, please step up and set me straight. I am new to cookin' let alone in a smoker. I have done two briskets so far and all the neighbors are still kickin' and talkin' to me so were not doin' to bad.
