    WOW, WOW!!!! Paul, what great info, I just done one contest so far, NKC, and in the middle of the pack, I might be able to crank up the chicken with that!, I have heard that people do shave the skin. going to have to try that. never thought to debone it,,,

    Great job on the write-up Paul - can't wait for your first BBQ book (I want a signed copy by the way). You have quite a gift for making BBQing look easy, eventhough we know it's not - Now time to practice.

    Default Thread Update

    We took 1st in chicken at the Pleasant Hill contest last weekend. Not including the Royal, that makes 3 firsts in a row in the chicken category. Prior to this little streak, we've not had 2 firsts in a row in any category so it's definitely a team best.

    Alright Paul, I'm hoping to give this a shot this weekend or early next week. (both my boys have baseball and soccer games) so how much time I have will determine when I do it.
    I want to try this as well as cook chicken I currently turn in at a contest and see which one we prefer. I'll Report back with pics and what we decide!

    I look forward to the pics and your assessment.

    I think it best to practice this technique several times before trying it in a contest. I look back at just the progression of pics I posted earlier from the last year and see how much we've evolved. For us, it didn't come easy and we still are improving each time out. We tried similar styles over a couple of years before getting any traction. Of course, we are slow learners.

    looks good. i tried the technique last weekend and other than being a pain in the a^% it turned out pretty good but i still need to practice and work out some kinks i have before entering it in a comp.anyway my comps are all but dreams except for one this year and thats because its right down the road.

    Hey! I tried this method tonight and the results were AMAZING!!! I used Bad Byron's Butt Rub and the Memphis Sauce by Sticky Fingers. A little too spicy, but still awesome!

    I did have a small problem getting the skins around. Have you considered using Breast skin? It's larger... What do you think?

    Also, I'm going to try brining next time. I usually brine, but wanted to try your method. Thanks for this post!

    We usually do enough pieces that the ones the skin will not wrap all the way around you can just "sample". I have not tried breast skin but that is a good idea.
