    Default Keeping track of different rubs

    Does anyone have a system they would like to share for keeping track of shoulders with different rubs during a smoke?

    During practice we've tried to use toothpicks to help keep track of which shoulders have which test rubs but this hasn't worked well for us. (could be too much sauce in the cook)

    Put a small skewer or potato nail with a tag on it marked with the rub that you are testing. Anything else will get mixed up during the cook or after the cook and you will not know which one you liked.

    Put a tag on it, when I was helping out at the GAB for the World Brisket Open they tag the meat. I assume you would want some stainless steel wire, then you run the wire through the point and put a knot the end of the wire, or tow knots or three and so forth.
